Fake meat

I’m not a huge fan of diets that consist of large amounts of meat…

However, small amounts of meat is probably good for your health – particularly cuts of offal.

These foods provide healthy fats, essential zinc and, in the case of offal, large amounts of nutrients which are otherwise difficult to source.

Eating too much brings excess iron, phosphate and pro-aging amino acids.

We are, of course, now inundated with a total barrage of anti-meat propaganda.

One of the reasons behind this is powerful forces heavily invested in marketing fake meat replacement products.

Meat alternatives now come in many different styles – from beef to fish sticks.

These franken-foods are processed from different sources.

Recently, researchers looked at the bioavailability of protein and amino acids from plant-based meat replacement products.

They found that these plant-based foods are not very well absorbed at all.

The research indicates that the nutritional labeling on these foods could be very misleading.

We will likely absorb far less of the listed protein content from fake meats than we do from real animal proteins.

The human cell research was done at The Ohio State University. The paper was published in the journal of The American Chemical Society.

Fake meat has been heavily marketed over the last few years – although it seems very few people are biting at the moment.

Some researchers have become interested in the nutritional aspects of these food products.

(Something which should have been heavily tested before these things or even thought about being brought to market.)

“Whether proteins in meat analogues have the ability to provide equivalent nutrition as those in animal meat remains unknown.”

There are many different types of fake meats – in this case the researchers used a blend made from soy and wheat proteins.

“Herein, meat analogues were produced by high-moisture extrusion using soy and wheat proteins.”

The soy/wheat – fake meat was compared against chicken breast.

The researchers looked at how well it was digested. They looked into how well the digested particles were absorbed.

They also looked at peptides – small, protein-like amino acid structures which are absorbed from food.

“The physicochemical properties, in vitro digestion, and cellular uptake of the released peptides were systematically compared between the meat analogues and the chicken breast.“

The researchers found that the different proteins are broken down into very different peptides.

The early experiments indicated that real meat protein might be easier to digest.

“After simulated digestion, soluble peptides in the meat analogues had a higher molecular weight and higher hydrophobicity.”

The researchers found that the amino acid composition of the 2 substances was quite different.

Amino acids are the building blocks of protein – and the fake meat had far fewer amino acids.

“The amino acid composition showed fewer essential and non-essential amino acids in the meat analogue permeate than in the chicken breast permeate.”

Perhaps most importantly it seems that the fake meat was more difficult to absorb after digestion.

The digested protein peptides were far more resistant to caco-2 cells.

These are the human gut cells which are responsible for much of our absorption of nutrition from food.

“The meat analogue exhibited less permeability of peptides across Caco-2 cells.”

Contrary to the blanket marketing we are subjected to in the mass media, these fake meats are nutritionally nothing like the real thing.

Food scientists may well be able to make these things taste quite good in the near future…

Yet I suspect we are many decades away from having fake meat replacements which will be anything close to the real thing nutritionally…
