When we consume polyunsaturated fats (PUFAs) they are broken down into unstable and harmful metabolites.

These metabolites cause all kinds of disease in the body.

The fats that produce these metabolites are increasingly common in the diet.

Palm oil has recently become the vegetable oil of choice.

Unfortunately, palm oil contains a relatively high amount of unstable PUFAs.

In this study, scientists set out to see if coconut oil could protect us from damage caused by palm-based vegetable oils.

Published in the Journal of Medical and Bioengineering, this study focused on a metabolite of palm oil called malondialdehyde (MDA).

MDA is one of the toxic breakdown products of PUFAs.

MDA has multiple harmful effects on many organs, especially the heart.

The scientists took 32 male rats and organized them into four groups of eight. 

  • Group 1 got normal rat food.
  • Group 2 got added virgin coconut oil.
  • Group 3 got added pre-heated palm oil.
  • Group 4 got pre-heated palm oil and virgin coconut oil on top of the normal diet.

The scientists heated the palm oil to ensure that it was oxidized – though it will cause damage to the body if you eat it, heated or not. 

After the rats ate this diet for eight months they were killed and examined.

Virgin coconut oil significantly reduced the amount of damage that fat did tot the rats’ hearts. 

“There was a significant decrease in peroxide value in the virgin coconut oil group.”

When they examined the levels of MDA in the hearts of these rats, they found that heated palm oil significantly increased this toxic metabolite.

Virgin coconut oil lowered toxic MDA – even when combined with heated palm oil.

“The malondialdehyde (MDA) level in the coconut oil and palm+coconut oil groups was reduced significantly compared to the palm oil only group.”

The study found that virgin coconut oil significantly reduces oxidative stress induced by unhealthy and unstable fats.

Many experts believe that oxidative stress is one of the causes of aging and degenerative diseases.

“Virgin coconut oil supplementation reduced the oxidative stress as depicted with a decrease in peroxide value and malondialdehyde (MDA) level.”

Unfortunately, in recent years palm oil has become a very common food staple.

Some types of palm oil have high levels of the nutrient beta-carotene.

Beta-carotene converts to healthy vitamin A.

So palm oil is being marketed as a health food.

Another reason palm oil has become so popular is that it has lower levels of unstable PUFAs than other popular vegetable oils.

However, palm oil actually has lots of PUFAs in it.

These PUFAs degrade during cooking or even just in the body…and become a problem.

“Repeatedly heated oil undergoes changes in a series of chemical reactions such as oxidation, hydrolysis, and polymerization that eventually alter the fatty acid composition.”

One of the reasons palm oil is less healthy than coconut oil is because it has far less saturated fat content.

“When the degree of unsaturation in fatty acid is greater, it is more vulnerable to lipid peroxidation.”

Previous experiments have shown that simply applying cooking processes to palm oil makes it toxic to the heart.

“Malondialdehyde (MDA) is one of the major end products of lipid peroxidation which causes endothelial damage, vascular inflammation and cell membrane injury.”

“Oxidative degradation of heated palm oil was proven to produce higher peroxide values and increased MDA.”

Another reason that palm oil has been marketed so successfully is that some types of it have high levels of protective vitamin E.

Vitamin E protects against oxidative damage – the very thing that this palm oil has been shown to cause. Hmm…

Cooking palm oil destroys vitamin E.

In reality, it is likely that the vitamin E content of palm oil is not sufficient to protect against its own toxic byproducts.

“It is known that palm oil is rich in antioxidant vitamin E, namely abundant amounts of tocotrienol and an amount of α-tocopherol that help to reduce the lipid peroxidation – but it was reported to have reduced those vitamins during repeated heating processes…thus failed to maintain its oxidative stability.”

So, yet again, coconut oil comes out on top of the list of healthy oils.

“Virgin coconut oil supplementation has the capability of reducing the oxidative stress and has good effect on health due to its stability against oxidative insult which leads to cardiovascular diseases.”
