The food we consume should contribute to our overall health.

Calories from fats and sugars should be turned into energy used to build and restore the body.

The more calories we can use without gaining fat, the more resources we have to invest in our health.

Ideally, we want to be able to consume more calories without gaining weight.

A study from the University of Tennessee looked at people involved in a weight loss program.

Some of the participants were put on a low dairy diet during a weight maintenance period.

The study found that those who consumed more dairy were able to consume more calories without gaining weight.

The research adds to previous studies showing that dairy foods have a special effect on metabolism.

It seems that the dairy fats and high calcium levels increase the metabolic rate, meaning we can consume more calories while not pulling on fat.

The human research was carried out at The University of Tennessee. The paper was published in Nutrition and Metabolism.

The study involved people going through a weight loss program and then being watched during the maintenance period after they had lost weight.

“We compared the effects of low versus recommended levels of dairy intake on weight maintenance and body composition subsequent to weight loss.

This was a randomized trial which lasted 9 months in total.

Weight loss was from 0 to 3 months, weight maintenance was 4 to 9 months.

During the maintenance period the participants were randomly split into 2 groups.

Some people ate more than 3 servings of dairy per day – others were limited to less than 1 serving of dairy on average per day.

“Participants were randomly assigned to low dairy (< 1 dairy serving/d) or recommended dairy (> 3 servings/d) diets for the maintenance phase.”

The study recruited over 300 men and women in their 30s and 40s with BMI in the 30s at the outset.

The researchers tracked levels of body fat and body weight throughout the study.

“Change in weight and body composition (total fat, trunk fat) from 4 to 9 months were the primary outcomes.”

They also recorded energy intake, calcium, dairy, and physical activity.

“Energy intake, calcium intake, dairy intake, and physical activity were measured as process evaluation.”

There was no significant difference in body fat during the maintenance period.

“During weight maintenance, there were no overall significant differences for weight or body composition between the low and recommended dairy groups.”

But the key finding of this study was that the people who consumed more dairy were able to consume more calories without gaining weight.

This is very important because calories are essential for our health. Our body uses sugar and fat as energy to build and restore the body.

“The recommended dairy group showed significantly greater energy intake and lower respiratory quotient compared to the low dairy group.”

The researchers found those consuming more dairy were able to safely burn more fat by the process of oxidation.

Some of this may be due to the relatively healthy fats in dairy when compared to many other sources of dietary fats that people may be otherwise consuming.

The saturated fats in dairy tend to increase the metabolic rate

…while the other major source of dietary fats – vegetable oils – tend to suppress metabolism.

“The higher dairy group exhibited evidence of greater fat oxidation and was able to consume greater energy without greater weight gain.”

We also know from other studies that calcium – found abundantly in dairy foods – is also very beneficial for the metabolism.

Consuming more calcium means that we can use more energy.

“Recommended levels of dairy products may be used during weight maintenance without contributing to weight gain compared to diets low in dairy products.”
